Our Story

Born from a love
of liquid alchemy.

Every great bar begins with a question: what if a drink could be more than a drink? Apex Aqua Vitae was born from that restless curiosity — from late-night conversations, dog-eared cocktail tomes, and an obsession with the moment a glass crosses the pass and finds its person.

"Aqua Vitae — water of life. We chose the name because we believe every pour should feel exactly that way."

We are nestled in the heart of Apex, North Carolina — a town that knows how to gather, celebrate, and linger. Our bar is a place where a Dalgona Old Fashioned is built with the same care as a sculptor approaching marble, where a mocktail earns the same reverence as a vintage Burgundy, and where the ritual of service is treated as its own art form.

Crafted Cocktails
Expect the Dalgona Old Fashioned — bourbon kissed by dalgona-whipped coffee and noir bitters — to arrive like a sculpture. The Caprese Martini, with tomato-infused Elyx vodka and balsamic vermouth, rewrites what a martini can be. Every drink is built to stop time, if only for a sip.

The Garden Nojito is a whole garden in a glass: Seedlip 108 with celery, cucumber, mint, basil, and smoked rosemary. The Aqua Coffea is cold brew dressed in ceremony. Because the ritual of a beautifully made drink belongs to everyone, always.
